First of all, what is sushi?
In America, sushi refers to nigiri, rolls, and often sashimi too.
Many people here call all of them sushi, but in Japan sashimi is not considered sushi.
Don’t forget chirashi. Chirashi is considered sushi too. 🍚
Sushi is a traditional Japanese food.
Let me tell you a little about the history of sushi. 🎤
The Japanese started eating sushi about a thousand years ago. The humble beginnings of sushi started with simple marinated fish and was served at food stalls. 🐡 It wasn’t raw fish because of hygienic reasons. Sushi was like a street food. 🍔
In 1897, thanks to the commercialized ice making machine, 🍧 it became easier to get ice, so sushi restaurants started serving raw fish easier.
In 1947, after the war all the sushi carts were forced to close due to hygienic reasons. Sushi becomes a luxury food. 💲
In 1958, the first conveyor belt sushi restaurant opened, followed by more and more restaurants.
Around 1980, conveyor belt sushi restaurants became popular all over Japan. People got to enjoy sushi as it become more affordable and convenient for families. 👨👨👧👦
Right now sushi restaurants are still considered luxury restaurants when there is no conveyor belt. 👩🍳
Sushi has a longer history than I thought. 😃
