What is Fried Tofu?
Fried tofu is tofu fried with corn starch or potato starch.
If you pour a soy sauce base dashi broth onto the tofu, it is then called Agè-dashi tofu. Age (ah geh) dashi (dah shi) tofu is literally translated as fried dashi (dashi broth) tofu. There is also usually a garnish on top. Such as, grated daikon, green onion/scallion, or dried bonito flakes.
At our restaurant our fried tofu does not come with sauce so vegans can enjoy this dish too. Vegans can also enjoy fried tofu with soy sauce depending on its brand.

Tofu is also known as bean curd and it is often used as a meat substitute as well as a diet food. It is healthy and it tastes good, so it is a win-win situation. Or you can take a 7-minute run! Either way, fried tofu is tasty and healthy. It is also free from cholesterol, low in sodium and low in carbs. In addition, it is a good source of protein.
Tofu is usually sold in 3 different densities at the market. Silken, firm and extra-firm. Depending on what kind of food you are making you need to pick right softness of tofu. If you are making miso soup silken is best choice.
But if you want to deep fry tofu, you need to pick extra firm, so the tofu won’t break easily when you cook. The thing I like about tofu is that it is so versatile. There are so many different ways to enjoy tofu!
